Water Kefir

I use the continuous brewing method here too.  I do clean out the container once a week.

Ingredients:
  • 3 Tbsp water kefir grains
  • 3 quarts filtered water
  • 1 tsp blackstrap molasses
  • 1/2 cup sugar

Method:
  1. Place kefir grains in brewing container.
  2. Dissolve molasses and sugar in water.
  3. Pour sugar water into brewing container.
  4. Allow 24-48 hours to ferment.
  5. Place water kefir in bottles with flavorings for second ferment.  Allow another 24 hours before transferring to the fridge.  See below for flavoring ideas.

 Favorite flavors:
  • Citrus mojito - lime juice, OJ, mint
  • Apple cider - apple core [optional: cinnamon stick, whole cloves]
  • Orange cream soda - OJ, vanilla extract
